Italian Sausage Tortellini Soup

This soup is absolutely delicious! Even my 6-year-old son, couldn't get over how amazing it was!

You can use sweet Italian sausage or mild/hot, I used sweet! It is fairly simple to make and it only requires two pots. You can make this a one-pot method by purchasing refrigerator tortellini!


1 pound ground sweet Italian sausage

1 small onion, diced

1 clove garlic or 1/2 Tbsp. Minced garlic

3 Tbsp. Flour

1 Tsp. Dried Basil

1/2 Tsp. Dried Oregano

1 Tsp. Hot sauce, I used Red Hot

1/4 Tsp. Pepper

1 Cup Heavy Whipping Cream

5 Cups Chicken Broth

2 Cups of baby spinach & baby Kale, chopped. (you can find this in the salad section, packaged together)

1 Package Cheese Tortellini (approximately 19 Ounce)

Salt to taste

1. In a separate pot, cook tortellini according to the package, only half the cook time.

2. Cook sausage, garlic, and onion until cooked.

3. Add the flour and cook for 1-2 minutes

4. Add 1/2 Tsp Basil, 1/2 Tsp. Oregano, 1Tsp. Hot sauce, 1/4 Tsp. Pepper. Stir to combine.

5. Add the Chicken broth and use a silicone spatula to scrape to the bottom of the pot to get all the cooked scrappings in there.

6. Add the cream, bring to a boil, reduce heat, and simmer

7. Add the Spinach and Kale and simmer for 3-5 minutes

8. Test the soup, and add salt to your desired amount.

9. Let simmer on low for about 10 minutes

10. Serve with bread or garlic bread


I cooked the Tortellini only half of the time, so they didn't get overcooked in the process, they are already cooked and only need to be heated from frozen
